β-glucans are natural polysaccharides that have significant therapeutic potential, particularly as metabolic and immune modulatory agents. Knowledge of the effects and functions of β-glucans, which have been used in traditional Chinese medicine for centuries, is continuously being added and advanced by modern immunological and biotechnological methods. The extraordinary interest in their medical effects is reflected in the high number of studies on cells and in animal models, and there are also a number of clinical trials conducted or in progress. This is also based on the fact that no toxic or other side-effects have so far been observed with their oral administration.
This publication provides an overview of the origins of interest in beta glucans, the possibilities of natural sources for their production, and the differences in the chemical and physical properties of beta glucans from different sources.
